Frequently Asked Questions:

What type of chocolate should I use?

I personally try to use dark chocolate chip or semisweet. Opt for cleaner brands like Enjoy Life, Lily’s, or Thrive Market. Additionally you could also use a chocolate bar, Hu brand is a great option.

Can I use a different nut butter?

These healthy take 5 cups would be delicious with either almond, or cashew butter. You can also substitute the peanuts for almonds or cashews as well if you are avoiding peanuts.

How can I make date caramel if I don’t have a food processor?

A high speed blender could also work well. You may just have to scrape down the side a bit more.

How to Make Healthy Take 5 Cups:

  1. Soak the dates

Place the dates in a glass container and cover with hot water. Place a lid over the container and let the dates sit for at least 30 minutes. This allows the dates to soften and therefore blend more smoothly.Dates soaked in hot water for healthy take 5 cups

  2. Make the date caramel

Place the dates, coconut milk, peanut butter and vanilla in a food processor. Blend on high until smooth, stopping to scrape down the sides a couple of times. Date caramel in food processor for healthy take 5 cups

  3. Start layering the cups

Using a silicone cupcake mold, begin by filling each cup with 1 tablespoon of peanut butter, topped with a handful of peanuts. Then add a tablespoon of the date caramel. Top with pretzel pieces. Layers of the take 5 date cups

  4. Melt the chocolate

Place the chocolate chips or chocolate pieces in a microwave safe bowl. Microwave in 30 second increments, stirring in between until the chocolate is fully melted.

  5. Finish layering the cups

Top the Take 5 cups with the melted chocolate until the top of each cup is fully covered. Sprinkle with flaky salt.

  6. Let the cups set in the freezer

Place the cups in the freezer for at least three hours until they are set. You should be able to pop them out of the molds easily at this point.

  7. Store or enjoy!

You can choose at this point if you want to store the cups in the freezer or in the refrigerator. Either is a great option. They are also ready to crunch into. They should last in the fridge for two weeks and the freezer for about a month, but I promise you will eat them all before it gets to that point.
